Instructions
Wing Preparation
Pat wings completely dry and season with the dry rub mixture. Let sit for 30 minutes.
Smoking
Smoke at 250°F (121°C) for 1.5 hours using hickory wood.
Glaze Making
Combine honey, bourbon, and butter in a saucepan. Simmer until thickened.
Crisping Finish
Increase smoker temperature to 350°F (177°C) and cook for additional 30 minutes, glazing every 10 minutes.
Chef’s Tips: For extra crispy skin, start wings at room temperature and ensure they’re completely dry before seasoning.
